The wines of Cave Spring Cellars originate from selected vineyards throughout the Niagara Peninsula, focusing on the benchlands of the Niagara Escarpment. Here, a combination of mineral rich soils, elevation and moderating breezes from lake Ontario create a meso-climate which gives full expression to the terroir of our region. Located on the slopes of the Beamsville Bench, the Cave Spring Vineyard is the exclusive source of our Estate Bottled wines, which represent out highest commitment to quality and authenticity. This wine is just off dry in style with a richly extracted texture, concentrated citrus fruit and very taut, mineral acid balance.
